Roasted Rosemary Potatoes with Garlic & Onions

8 Medium Red Potatoes Diced into large Bite-sized Pieces

1 Medium Onion Sliced thick

2 Tbs Finely Chopped Fresh Rosemary

3 Cloves Finely Chopped Garlic

1 Cup Pepper Chopped into Bite-sized Pieces

2 Tbs Olive Oil

Salt and Pepper to taste

Preheat Oven to 400 degrees

Combine everything together in a bowl and mix together until evenly distributed. Bake for 30 to 40 minutes or until potatoes are browned and tender.
