Tofu Fried Rice with Cabbage
Cook and chill the rice the night before, so it will be ready ahead of time. 1 tablespoon oil 1 (12.3 ounce) package extra firm tofu drained & cubed 3 cups thinly sliced cabbage 3 cups chilled cooked long grain rice 3 tablespoons soy sauce 2 tablespoon dark sesame oil 1/2 cup frozen green peas, thawed 2 tablespoons thinly sliced green onion ¼ teaspoon salt
Heat vegetable oil in a large skillet over medium heat, add tofu cubes and cook 9 minutes or until golden brown, stirring occasionally. Remove from the pan. Add cabbage to pan and cook 45 seconds or until cabbage wilts, stirring constantly. Stir in tofu peas, green onions, and salt, cook 3 minutes or until thoroughly heated stirring occasionally
