Salad Dressing
We eat a lot of salad here are Good Humus, so we have
learned a few good dressings
Sesame Vinaigrette with
Chili Oil
1 garlic clove minced
1 teaspoon minced ginger
1 shallot finely diced
3 tablespoons rice wine vinegar
1 teaspoon soy sauce
1 teaspoon light brown sugar
3 ½ tablespoons sesame oil
1 tablespoons dark sesame oil]
½ teaspoon chili oil
1 tablespoon chopped cilantro optional
Combine the garlic, ginger, and shallot in a small bowl, cover with the
vinegar, a nd let stand for 15 minutes. Stir in the soy sauce and sugar,
then whisk in the oils, add the cilantro. Taste and adjust the amount of soy
and sugar if needed.
Blue Cheese Dressing
6 tablespoons olive oil
2 tablespoons sour cream or yogurt
5 teaspoons sherry vinegar or aged red wine vinegar
3 ounces blue cheese
1 tablespoon snipped chives
Salt and Pepper
Whisk all the ingredients in a bowl except the salt and pepper, leaving the
cheese a little chunky or smooth as you prefer. Taste and add salt if
needed-the cheese will be salty-season with pepper
Moroccan-spiced Lemon
Dressing
¼ cup fresh lemon juice
2 tablespoons nonfat plain yogurt
1 ½ teaspoon honey
¼ teaspoon ground cumin
¼ teaspoon ground cinnamon
¼ teaspoons ground ginger
¼ cup olive oil
¼ teaspoon salt Pepper to taste
Whisk lemon juice, yogurt, honey, cumin, cinnamon, and ginger in a small
bowl until blended. Slowly whisk in oil so that the dressing becomes smooth
and emulsified. Season to taste.
