Dried Tomatoes
Dried tomatoes can be used almost anywhere. Simply
re-hydrate to your liking.
Polenta
with Spinach, Black Beans, and Goat Cheese
1-teaspoon olive oil
2 garlic cloves minced
½ vegetable broth
¼ chopped sun dried tomatoes halves
½ teaspoon ground cumin
1 can black beans, rinsed and drained (15 ounce)
1 bunch fresh spinach
4 cups water
1 cup uncooked polenta
1 tablespoons butter
½ teaspoon salt
¼ cup grumbled goat cheese
Pepper (optional)
Heat 1-teaspoon oil in a large non-stick skillet over medium high heat. Add
garlic to pan, sauté 1 minute or until golden. Stir in broth, tomatoes,
cumin and beans, bring to a simmer. Cook 2 minutes, stirring occasionally.
Remove from heat. Add spinach, tossing to combine. Bring water to a boil in
a medium saucepan. Add polenta, butter and salt stir well with a whisk.
Reduce heat, and summer 3 minutes or until thick, stirring constantly. Spoon
in ¾ cup polenta into each of 4 bowls; top each with ¾ cup bean mixture.
Sprinkle 3 tablespoons cheese over each serving, garnish with black pepper
if desired. Yield 4 servings.
Sun-Dried Tomato Sauce
over Chicken
This sauce is similar to a tapenade but has a thinner consistency.
1 (8 ounce) jar oil packed dried tomatoes-Instead take half of the package
of tomatoes put in a plastic bag and add 1-2 tablespoons of water. Shake and
mix and wait for about 1-2 hours and they should then be soft but not mushy
1 ¼ cup chicken broth
2/3 cup Kalama olives pitted
2 tablespoon chopped parsley
1 tablespoon capers
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1 teaspoon balsamic vinegar
1 garlic clove, minced
4 chicken breast halves boneless
Cooking spray
2 cups cooked couscous
Prepare grill to medium high heat. Drain dried tomatoes in a sieve over a
bowl, reserving oil or water. Place 1 ½ tablespoons reserved oil in a
blender or food processor. Coarsely chop 2/3 cup drained tomatoes; blend.
Place remaining oil and tomatoes in jar for another use. Add broth and next
7 ingredients to blender process until smooth. Place chicken on grill rack
coated with cooking spray, grill 5 minutes on each side or until done. Serve
chicken over couscous, top with sauce.
